Equipment
Air fryer
bowl for rising dough
bowl for dipping
Prep Time
24+ hours
1-2 hours first day, time to rise, roughly 1 hour prep/bake time on second day
Ingredients
1 potato
1/4 cup milk
1/4 cup sugar
2 tsp teaspoons yeast
1/2 tsp salt
1/2 tsp nutmeg
3/4 tsp vanilla
4 tablespoons unsalted butter, soft
2 large eggs
2.5 cups flour, more if needed
Sugar and cinnamon combined for dipping donuts
Directions
Plan to make 1 day in advance.
Peel potato and cut into chunks
Place in medium saucepan and cover with 1 inch water
bring to boil reduce and heat to low, simmer until potatoes are tender (~20 minutes)
drain well and mash.
Combine the milk and sugar and heat in a small saucepan and stir until lukewarm.
Transfer to large bowl.
Put yeast in milk and stir. Let stand for five minutes to soften.
Add sugar, salt, nutmeg, vanilla, butter, egg, and mashpotatoes to milk.
Add 1 1/2 cups of the flour and stir well with a spoon to make a soft sticky batter.
Gradually stir in ramining flour.
Place dough on floured surface and knead until dough is soft, smooth and elasticy.
Add more flour as needed but should remain slightly sticky.
Shape dough and place in a ball. Let rise until doubled in sized. Roughly 1 hour.
Gently push fist into dough.
Lift it up reshape the mass into a ball and return. Cover and refrigerate overnight.
The next day turn dough out and roll out.
Preheat air fryer
Lightly flour cutter ( I used a 3 inch biscuit cutter) and cut donuts out. Use smaller cutter to make donut holes.
Air fry on air crisp setting 350 degrees for 3 minutes. Repeat as needed
Upon removable dunk into cinnamon sugar mixture.

cup molasses,
two-thirds cup of milk
one egg
piece of butter half the size of an egg
two teaspoons cream of tartar
one teaspoon baking soda
Combine above
Grate in mug
Use enough flour to roll out.
No directions on frying given.
